Chef Riq’s Notes
This dish is a masterclass in contrast — firm bangers, creamy mash, silky brown sauce, and bright peas.
As a blind chef, I rely on:
-
Sound cues: The sizzle of sausages and soft bubbling of sauce.
-
Touch cues: The firmness of cooked bangers and the thickness of the roux.
-
Aroma cues: Onions turning sweet, roux becoming nutty, sauce growing deeper.
Pairing traditional pub food with a French mother sauce brings comfort and technique together on one plate — accessible, flavorful, and unforgettable.
