Korean Fried Chicken
This Korean Fried Chicken is built on rhythm, texture, and balance. Chicken thighs are marinated for depth, coated in a light batter, and fried twice for a crisp, crackling crust that stays juicy inside. The technique focuses on sound, smell, and touch, making it accessible, intentional, and confidence-building—without relying on sight. Optional gochujang glaze adds sweet heat, but the chicken stands beautifully on its own.

Instructions (Sensory-Guided)
1. Marinate the Chicken
In a bowl, combine onion, garlic, cayenne, salt, and pepper. Add chicken and coat thoroughly.
Tactile cue: Chicken feels slick and evenly seasoned, not watery.
Smell cue: Sweet onion, sharp garlic, gentle heat.
Cover and refrigerate at least 4 hours or overnight.
2. Make the Batter
Whisk cornstarch, flour, sugar, pepper, and salt. Slowly add cold water until smooth and pourable.
Touch cue: Batter ribbons off the whisk and disappears within seconds.
Sound cue: Whisk moves quietly—no lumps dragging.
3. First Fry (Structure)
Heat oil to 340°F / 170°C.
Dip the chicken into the batter, let the excess drip off, and lower it gently into the oil. Fry in batches for 4 minutes.
Sound cue: A steady, calm shhhh.
Touch cue: Crust feels set but flexible.
Remove to a rack or paper towel to rest.
4. Second Fry (Crunch)
Increase the oil to 375°F / 190°C. Fry chicken again for 3–4 minutes.
Sound cue: Sharper hiss, higher pitch.
Smell cue: Lightly nutty, toasted aroma.
Touch cue: Crust feels tight and crisp.
Lift and drain well.
5. Optional Sauce
Simmer all sauce ingredients for 1–2 minutes, until slightly thickened.
Toss the chicken lightly, or serve it on the side.
Touch cue: Sticky but light—never soggy.

Chef Riq’s Notes
This recipe is about trusting your senses.
When you listen to the oil, feel the crust tighten, and smell the shift from raw to toasted, you’re cooking with intention.
Crisp doesn’t come from guessing—it comes from attention.
